A few weeks ago, my Pechu offered me two new recipe books and, in one of them, I found a recipe for Peanut Butter Cookies (Confeitaria Hummingbird, Mel Editores, Setembro de 2010, Portugal) that are eat and cry for more!
It took some “falling in love”, though, and, after forgetting a few times to include all the ingredients in the shopping list, last weekend I got some Extra Crunchy Skipy (yes, the one you always had at home!). I have to admit though that I had never tasted it before but, while preparing the cookies, I found having some for myself, several times! Is just that those crunchy peanuts are just too tasty… hum!!!
Of course, I changed a few things on the recipe to adapt it to the items that were available at the time: replaced the powdered sugar with fine sugar and salt-free butter with margarine. This is how it turned out:

Now tell me, how could anybody resist them??
American Cookies
225 g of margarine
200 g of fine sugar
200 g of fine light yellow sugar
2 eggs
½ teaspoon vanilla essence
240 g of crunchy peanut butter
340 g of all purpose flour
2 ½ teaspoons of baking soda
¼ teaspoon of salt
75 g of black chocolate chips
Pre-heat the oven at 180ºC.
Beat the margarine with the sugar until you obtain a light mix.
Add the eggs one by one whirling good and fast.
Slowdown and add the vanilla and the peanut butter.
Mix the flour, the baking soda and salt and mix until it is consistent.
Evenly distribute the chocolate on the mix.
Cover a tray with greaseproof paper and, using two spoons, distribute the mix over it in small portions.
Bake for 15 minutes or until they are flat and slightly golden.
Let cool on the tray and afterwards put them on top of a grill to cool completely.
Store in tightly sealed boxes so that they remain soft and crunchy.
The original recipe says it makes 24 cookies but I got at least 60! BE CAREFUL! They rise a lot once in the oven. Remember to space the cookies well unless, of course, you want to have a single big cookie.
Now we have our cookies! In my opinion, there’s nothing better than eating them a big glass of cool milk while watching my favourite TV show!
